Step-by-Step Instructions
  1. In a mixing bowl, combine diced apples with brown sugar, granulated sugar, ground cinnamon, and lemon juice. Mix until apples are evenly coated.
  2. Add the apple mixture to a medium saucepan over medium heat with water. Stir and bring to a gentle boil. Cover and simmer for about 10 minutes.
  3. Remove ½ cup of the cooking liquid and whisk in cornstarch. Return this mixture to the saucepan and cook over medium heat until thickened.
  4. Preheat your oven to 350°F (175°C) for baking the tortilla chips.
  5. Spray both sides of each tortilla with non-stick spray. Mix granulated sugar with cinnamon, sprinkle over tortillas, and cut into wedges.
  6. Bake the tortilla wedges for 9-12 minutes until golden brown and crisp. Cool on a wire rack.
  7. Transfer the Apple Pie Dip to a serving bowl and garnish with cinnamon. Serve warm or chilled with tortilla chips.
