- Preheat your oven to 350°F (175°C) and prepare a 9x9-inch baking dish by greasing it or lining it with parchment paper.
- In a large mixing bowl, cream together ½ cup of softened unsalted butter and ½ cup of granulated sugar until light and fluffy, about 2-3 minutes. Gradually add 1 cup of all-purpose flour and a pinch of salt, mixing until the dough comes together. Press this mixture evenly into the prepared baking dish.
- Evenly sprinkle 1 cup of dried cherries and ½ cup of white chocolate chips over the shortbread base, gently pressing them into the dough.
- In another bowl, combine ½ cup of oats, ½ cup of brown sugar, ½ teaspoon of ground cinnamon, and ¼ cup of flour. Mix until crumbly and scatter over the cherries and chocolate layer.
