  • 2 medium Cucumbers Sliced into half-moons
  • 0.5 cup Red Bell Pepper Diced
  • 0.25 cup Red Onion Finely diced
  • 0.25 cup Fresh Cilantro Chopped
  • 0.5 cup Cotija Cheese Crumble
For the Dressing
  • 3 tablespoons Mayonnaise Swap for Greek yogurt for a lighter version
  • 3 tablespoons Sour Cream or Greek Yogurt Adds richness and tang
  • 1 lime Lime Juice Juice of 1 lime
  • 0.5 teaspoon Chili Powder Adjust based on your spice preference
  • 0.5 teaspoon Smoked Paprika Regular paprika can also be used
  • Salt and Pepper To taste

Method
 

Preparation
  1. Heat a dry skillet over medium-high heat. Add corn kernels and sauté for 5-7 minutes until charred. Let it cool.
  2. Slice cucumbers into half-moons, dice red bell pepper, finely chop red onion, and chop cilantro.
  3. In a mixing bowl, combine mayonnaise, sour cream or yogurt, lime juice, chili powder, smoked paprika, salt, and pepper.
  4. In a serving bowl, gently fold together corn, cucumbers, bell pepper, onion, and cilantro.
  5. Sprinkle cotija cheese over the salad, gently combine, and serve immediately or refrigerate.
