  • 1 pound flank steak or skirt steak or sirloin
  • 2 ripe avocados choose soft avocados
  • 1 cup corn kernels fresh, frozen, or canned
  • 1 cup cherry tomatoes halved
  • 1 cup cooked quinoa or brown rice gluten-free option is quinoa
  • 1/2 small red onion or green onions for a milder flavor
  • 2 tablespoons lime juice fresh juice preferred
For Seasoning
  • 3 tablespoons olive oil extra virgin for best flavor
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • salt and pepper to taste
For Garnish
  • 1/4 cup fresh cilantro omit if desired
  • hot sauce or salsa optional

Method
 

Preparation Steps
  1. Mix olive oil, cumin, chili powder, salt, and pepper in a small bowl. Rub over flank steak and marinate for at least 30 minutes.
  2. Preheat grill or skillet to medium-high heat (about 400°F).
  3. Cook marinated flank steak for 4-5 minutes per side for medium-rare, using a meat thermometer to check for 130°F.
  4. Let the steak rest for about 10 minutes after cooking, then slice against the grain.
  5. Prepare corn and vegetables: grill fresh corn until slightly charred, or sauté frozen/canned corn for about 5 minutes. Chop cherry tomatoes and dice red onion.
  6. Slice avocados in half, remove pits, scoop out flesh, and slice into wedges. Drizzle with lime juice.
  7. Assemble bowls: start with quinoa or brown rice, layer sliced steak, corn, tomatoes, onion, and avocado.
  8. Finish with lime juice and cilantro. Serve with hot sauce or salsa if desired.
