  • 2 pieces lime wedges
  • 1/2 cup sour cream or yogurt for extra creaminess
  • to taste hot sauce for heat

Preparation Steps
  1. Wash and chop fresh corn, cherry tomatoes, and red onion. Slice the avocado in half, remove the pit, and scoop the flesh into a bowl.
  2. Preheat your grill or skillet over medium-high heat.
Cooking Steps
  1. Drizzle olive oil over the steak and season with salt and pepper. Let rest for 10-15 minutes.
  2. Cook the steak on the grill or skillet for 4-5 minutes per side for medium-rare. Let it rest for 5 minutes before slicing.
  3. In the same skillet, sauté corn over medium heat for 3-4 minutes until tender and slightly charred.

  1. Layer sautéed corn at the base of a bowl, then add slices of steak, avocado, cherry tomatoes, and red onion. Top with fresh cilantro.
