Method
 

Marinade Preparation
  1. In a large mixing bowl, combine soy sauce, fish sauce, lime juice, brown sugar, and ground chili paste, mixing thoroughly until the sugar dissolves.
  2. Stir in minced garlic, grated ginger, and chopped cilantro into the marinade, integrating the fresh herbs and spices.
  3. Add chicken thighs to the marinade, ensuring they are entirely coated. Cover tightly and marinate in the refrigerator.
Peanut Sauce Preparation
  1. In a separate bowl, whisk together peanut butter and coconut milk until smooth and creamy.
Grilling
  1. Preheat your grill to medium-high heat.
  2. Thread the marinated chicken onto skewers.
  3. Place the chicken skewers on the hot grill and cook for 5–7 minutes on each side.
  4. During the last few minutes of grilling, brush peanut sauce over the skewers.
  5. Remove the skewers from the heat and let them rest for about 2 minutes.
  6. Serve hot, drizzled with remaining peanut sauce and garnished with cilantro.
