Method
 

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C). Grease an 8x8-inch baking dish to prevent sticking.
  2. In a bowl, mix 2 cups of sushi rice, 1 tablespoon rice vinegar, ½ teaspoon sugar, and ½ teaspoon salt. Press into the bottom of the dish.
  3. In another bowl, combine 12 oz of flaked salmon, ¼ cup mayonnaise, 2 tablespoons Sriracha sauce, 1 tablespoon soy sauce, and 1 teaspoon sesame oil. Mix until smooth.
  4. Spread the salmon mixture over the rice, then sprinkle with ½ cup shredded mozzarella cheese.
  5. Bake for 18-20 minutes until the cheese is melted and golden.
  6. Cool for a few minutes, garnish with green onions and sesame seeds, and serve with seaweed squares.
