Preparation Steps
  1. Preheat your oven to 375°F (190°C).
  2. In a large mixing bowl, combine the ground beef, chopped onion, cilantro, jalapeño, garlic, cumin, chili powder, smoked paprika, salt, and pepper. Mix gently until just combined.
  3. Fold in the cheddar cheese and crushed tortilla chips into the meat mixture. Ensure even distribution.
  4. Add the beaten egg and mix until fully integrated. Avoid overmixing.
  5. Shape the mixture into golf-ball-sized meatballs.
  6. Heat olive oil in an ovenproof skillet over medium heat. Sear the meatballs for about 5 minutes until browned on all sides.
  7. Pour the Mexican-style tomatoes with green chiles over the meatballs, then transfer to the oven and bake for 15-20 minutes.
  8. Remove from the oven and let rest before serving with lime wedges.
