- In a large mixing bowl, whisk together flour, sugar, baking powder, and salt until well combined.
 - In a separate bowl, mix milk, egg, melted butter, and vanilla extract.
 - Combine both mixtures gently until just blended; a few lumps are okay.
 - Preheat a non-stick skillet over medium heat for 2-3 minutes and lightly grease it.
 - Pour 1/4 cup of batter onto the skillet for each pancake. Cook for 2-3 minutes until bubbles form.
 - Flip the pancakes carefully and cook for another 2-3 minutes until golden brown.
 - Immediately sprinkle with cinnamon sugar after cooking.
