Brownie Preparation
- Preheat your oven to 160°C (320°F). Prepare a 9" x 9" baking pan by greasing it lightly or lining it with parchment paper.
- In a large mixing bowl, whisk together the all-purpose flour, white sugar, cocoa powder, salt, and baking powder.
- Toss the chocolate chips in the dry mixture until well-coated.
- In a separate bowl, combine the melted butter, eggs, vanilla extract, and sourdough starter. Whisk until blended.
- Pour the wet ingredients into the dry mixture and mix gently until just combined.
- Transfer the brownie batter into the prepared baking pan and spread it evenly.
- Bake for 35 minutes, or until the edges are set. Check for doneness with a toothpick.
- Let the brownies cool in the pan for about an hour.
- For the ganache, heat the heavy whipping cream and semi-sweet chocolate chips in a microwave-safe bowl until melted.
- Pour the ganache over the cooled brownies and sprinkle mini M&Ms on top. Refrigerate for two hours before slicing.

Notes
Letting the brownies cool overnight in the fridge intensifies the chocolate flavor. Monitor your brownies closely to avoid overbaking.
