Ingredients

For the Brownies
  • 1 cup All Purpose Flour Swap for whole wheat flour for added fiber.
  • 1 cup White Sugar Coconut sugar can be used for a lower glycemic option.
  • 1/2 cup Cocoa Powder Opt for Dutch-processed cocoa for deeper color.
  • 1/4 teaspoon Salt Pink Himalayan salt adds a lovely touch.
  • 1 teaspoon Baking Powder Baking soda can be substituted with adjustments.
  • 1 cup Chocolate Chips Semi-sweet is recommended, but dark chocolate adds depth.
  • 1/2 cup Butter Substitute with coconut oil for a dairy-free alternative.
  • 2 large Eggs Flax eggs make a great vegan substitute.
  • 1 teaspoon Vanilla Extract Using pure vanilla yields the best results.
  • 1 cup Sourdough Starter Unfed or active starter works well.
For the Ganache
  • 1 cup Heavy Whipping Cream Coconut cream can work for a dairy-free version.
  • 1 cup Mini M&Ms Consider chocolate-coated candies for a similar effect.

Equipment

  • 9" x 9" baking pan
  • Mixing bowls
  • Whisk
  • Spatula
  • Microwave-safe bowl

Method

Brownie Preparation
  1. Preheat your oven to 160°C (320°F). Prepare a 9" x 9" baking pan by greasing it lightly or lining it with parchment paper.
  2. In a large mixing bowl, whisk together the all-purpose flour, white sugar, cocoa powder, salt, and baking powder.
  3. Toss the chocolate chips in the dry mixture until well-coated.
  4. In a separate bowl, combine the melted butter, eggs, vanilla extract, and sourdough starter. Whisk until blended.
  5. Pour the wet ingredients into the dry mixture and mix gently until just combined.
  6. Transfer the brownie batter into the prepared baking pan and spread it evenly.
  7. Bake for 35 minutes, or until the edges are set. Check for doneness with a toothpick.
  8. Let the brownies cool in the pan for about an hour.
  9. For the ganache, heat the heavy whipping cream and semi-sweet chocolate chips in a microwave-safe bowl until melted.
  10. Pour the ganache over the cooled brownies and sprinkle mini M&Ms on top. Refrigerate for two hours before slicing.

Letting the brownies cool overnight in the fridge intensifies the chocolate flavor. Monitor your brownies closely to avoid overbaking.
