  • 4 cups Vegetable or Chicken Broth Vegetable broth for vegan
  • 3 cloves Garlic Minced
  • 1 teaspoon Oregano Dried or fresh
  • 1 teaspoon Cumin Optional
  • 1 teaspoon Salt Adjust to taste
For the Noodles
  • 2 cups Fideo Noodles Can substitute cut spaghetti
  • 2 tablespoons Olive Oil Extra virgin preferred
For Garnishing
  • 1 bunch Cilantro Chopped
  • 2 units Lime Cut into wedges

Method
 

Step-by-Step Instructions
  1. Blend the tomatoes, garlic, olive oil, oregano, salt, and cumin in a blender until smooth.
  2. In a pot, heat olive oil over medium heat. Toast the fideo noodles until golden brown (3-4 minutes).
  3. Combine the blended tomato mixture with the toasted noodles. Stir for 1 minute.
  4. Gradually add broth and bring to a boil. Simmer uncovered for about 5 minutes.
  5. Stir in cilantro and serve with lime wedges.
