- Preheat your oven to 400°F (200°C).
- Line a large sheet pan with parchment paper or grease it lightly with olive oil.
- Toss the halved baby potatoes with olive oil, garlic powder, paprika, and salt and pepper.
- Spread the seasoned potatoes in a single layer on one side of the prepared baking sheet.
- Roast the potatoes for about 15 minutes.
- Trim and chop your seasonal vegetables; toss them with the remaining olive oil, salt, and pepper.
- After 15 minutes, remove the sheet pan and add the salmon fillets alongside the seasoned vegetables.
- Lightly sprinkle salt and pepper over the salmon fillets.
- Return the sheet pan to the oven and roast everything for an additional 15 to 20 minutes.
- Once cooked, garnish with fresh lemon slices and chopped parsley.
