For the Cashew Mixture
  • 1 cup unsalted cashews Can substitute with almonds or peanuts.
For the Veggies
  • 2 cups bell peppers Use vibrant colors.
  • 1 cup diced onion Adds flavor.
For the Marinade
  • 1/4 cup soy sauce Use tamari for gluten-free.
  • 2 tablespoons honey Can substitute with agave syrup.
  • 2 tablespoons rice vinegar
  • 2 tablespoons sesame oil Can be omitted.
  • 3 cloves minced garlic Essential for flavor.
  • 1 tablespoon minced ginger

Method
 

Instructions
  1. Preheat your oven to 400°F (200°C).
  2. In a large mixing bowl, whisk together the soy sauce, honey, rice vinegar, sesame oil, minced garlic, and ginger.
  3. Cut the chicken into bite-sized pieces and add them to the marinade. Let marinate for at least 15 minutes.
  4. Chop the bell peppers and dice the onion. Combine the marinated chicken, bell peppers, and onion on a sheet pan.
  5. Drizzle any remaining marinade over the ingredients and sprinkle with salt and pepper.
  6. Bake in the preheated oven for about 20 minutes, stirring halfway through.
  7. Remove the pan and sprinkle the cashews over the chicken and veggies. Bake for an additional 10-15 minutes.
  8. Garnish with freshly chopped cilantro and serve over rice or noodles.
