- Preheat your oven to 400°F (200°C).
- In a large mixing bowl, whisk together the soy sauce, honey, rice vinegar, sesame oil, minced garlic, and ginger.
- Cut the chicken into bite-sized pieces and add them to the marinade. Let marinate for at least 15 minutes.
- Chop the bell peppers and dice the onion. Combine the marinated chicken, bell peppers, and onion on a sheet pan.
- Drizzle any remaining marinade over the ingredients and sprinkle with salt and pepper.
- Bake in the preheated oven for about 20 minutes, stirring halfway through.
- Remove the pan and sprinkle the cashews over the chicken and veggies. Bake for an additional 10-15 minutes.
- Garnish with freshly chopped cilantro and serve over rice or noodles.
