Step-by-Step Instructions
  1. In a large mixing bowl, whisk together the soy sauce, brown sugar, water, rice vinegar, minced garlic, grated ginger, black pepper, and optional red pepper flakes.
  2. Add the chicken thighs to the marinade, ensuring they are fully coated. Cover and refrigerate for at least 1 hour or overnight.
  3. Preheat your oven to 375°F (190°C) about 20 minutes prior to baking.
  4. Arrange the marinated chicken thighs in a baking dish and pour remaining marinade over them.
  5. Bake the chicken for 35-40 minutes until juices run clear and internal temperature reaches 165°F (74°C).
  6. Broil the chicken for an additional 5 minutes for caramelization.
  7. Let the chicken rest for about 5 minutes before serving.
  8. Garnish with green onions and optional sesame seeds before serving.
