Method
 

Step-by-Step Instructions
  1. Spray the inner pot of your slow cooker with nonstick spray.
  2. Place the chicken breasts at the bottom of the slow cooker.
  3. Pour the enchilada sauce, tomatoes, green chiles, and taco seasoning over the chicken, then stir to combine.
  4. Cover and set to cook on High for 3-4 hours or Low for 4-6 hours.
  5. Remove the chicken and shred it using forks or a stand mixer.
  6. Return the shredded chicken to the slow cooker and mix in half of the cheese, black beans, and corn.
  7. Add the sliced tortillas and fold them into the mixture.
  8. Sprinkle the remaining cheese over the top.
  9. Cover and cook on High for an additional 20-30 minutes.
  10. Optional: Add cream cheese in the last 10 minutes of cooking.
  11. Garnish with fresh cilantro before serving.
  12. Serve generous portions with your favorite sides.
