- In a large mixing bowl, combine the ground chicken, finely chopped onion, minced garlic, parsley, cumin, coriander, salt, and black pepper. Mix thoroughly and let rest for 10 minutes.
- With damp hands, shape the mixture into oval-shaped koftas, about 2-3 inches long.
- Preheat your grill to medium-high heat (around 400°F). Lightly brush the grates with olive oil.
- Place the koftas on the grill and cook for 10-12 minutes, turning occasionally until golden-brown and cooked through.
