For the Casserole
  • 3 cups shredded chicken use rotisserie chicken for quicker option
  • 4 cups cauliflower rice fresh or frozen
  • 8 oz cream cheese
  • 2 cups shredded cheddar cheese reserve half for topping
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp paprika
  • to taste salt & black pepper
  • 2 tbsp olive oil for sautéing
Optional Ingredients
  • 1 cup chopped spinach lightly sautéed
  • 1 cup broccoli florets can be pre-cooked
  • 1 cup sliced mushrooms lightly sautéed

Method
 

Step 1: Preheat Oven
  1. Preheat your oven to 375°F (190°C).
Step 2: Prepare Chicken
  1. Cook raw chicken by boiling or baking until fully cooked, then shred. If using rotisserie chicken, remove skin and shred meat.
Step 3: Sauté Cauliflower Rice
  1. In a skillet, heat olive oil over medium heat. Sauté cauliflower rice for 5-7 minutes until tender.
Step 4: Mix Ingredients
  1. Combine shredded chicken, sautéed cauliflower rice, cream cheese, half of the cheddar cheese, garlic powder, onion powder, paprika, salt, and pepper in a mixing bowl.
Step 5: Transfer to Baking Dish
  1. Grease a baking dish, pour mixture in, and top with remaining cheddar cheese.
Step 6: Bake
  1. Bake uncovered for 20-25 minutes until cheese is melted and bubbling.
