- In a small bowl, mash half of a ripe avocado using a fork until smooth. Add one teaspoon of fresh lemon juice, along with salt and pepper to taste.
- Take two slices of your chosen bread, and spread one tablespoon of mayonnaise on one side of each slice. On one slice, generously spread the avocado mixture, then layer half a cup of shredded cooked chicken and two slices of cheese.
- Heat a skillet over medium heat and add one tablespoon of butter. Place the sandwich in the skillet with the mayo-side facing outward. Grill for about 3-4 minutes until golden brown.
- Carefully flip the sandwich over, cooking for another 3-4 minutes until the other side is golden brown and the cheese is melted.
- Remove the sandwich from the skillet, slice in half and serve immediately while warm.
