Chimichurri Preparation
- In a medium bowl, combine parsley, oregano, red chili pepper, and garlic. Slowly drizzle in olive oil and wine vinegar. Season with salt and pepper, then mix well.
- Place chicken thighs in a mixing bowl or resealable bag and pour one-third of the chimichurri sauce over them. Marinate in the refrigerator for 20-30 minutes.
Grilling Chicken
- Preheat the grill to medium-high heat, around 400°F (200°C).
- Grill the marinated chicken for 4-6 minutes per side or until the internal temperature reaches 165°F (75°C).
- Transfer cooked chicken to a platter and drizzle with remaining chimichurri sauce.
