For the Chimichurri Sauce
  • 1 cup Flat-leaf Parsley Finely chopped
  • 2 tablespoons Fresh Oregano Can use dried if needed
  • 1 piece Red Chili Pepper Finely diced; red pepper flakes can substitute
  • 4 cloves Garlic Minced, adjust to taste
  • ½ cup Extra Virgin Olive Oil Use quality oil
  • 3 tablespoons Red Wine Vinegar Can substitute with white wine vinegar or lemon juice
  • 1 teaspoon Kosher Salt For seasoning
  • ½ teaspoon Black Pepper Adjust to taste

Method
 

Chimichurri Preparation
  1. In a medium bowl, combine parsley, oregano, red chili pepper, and garlic. Slowly drizzle in olive oil and wine vinegar. Season with salt and pepper, then mix well.
  2. Place chicken thighs in a mixing bowl or resealable bag and pour one-third of the chimichurri sauce over them. Marinate in the refrigerator for 20-30 minutes.
Grilling Chicken
  1. Preheat the grill to medium-high heat, around 400°F (200°C).
  2. Grill the marinated chicken for 4-6 minutes per side or until the internal temperature reaches 165°F (75°C).
  3. Transfer cooked chicken to a platter and drizzle with remaining chimichurri sauce.
