Ingredients

For the Filling
  • 12 pieces Manicotti shells Ensure they are cooked al dente to maintain shape.
  • 2 cups Cooked chicken Adds protein; rotisserie chicken can be used for quicker prep.
  • 15 oz Ricotta cheese Can substitute cream cheese mixed with milk if unavailable.
  • 2 cups Mozzarella cheese Use low-moisture mozzarella for better melting.
  • 1/2 cup Parmesan cheese Grated is preferred for easy incorporation.
  • 1/4 cup Fresh parsley Garnish for color and freshness.
For the Sauce
  • 1 jar Alfredo sauce Store-bought is convenient, while homemade can elevate flavors.
  • 1 teaspoon Garlic powder Fresh minced garlic can also be used.
  • 1 teaspoon Salt Adjust based on the salinity of your cheese choices.
  • 1/2 teaspoon Pepper Freshly cracked pepper is recommended.

Equipment

  • Skillet
  • Medium saucepan
  • Baking dish
  • Mixing bowl

Method

Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C). Cook the manicotti shells according to the package directions until al dente, about 8-10 minutes. Drain and cool.
  2. In a skillet over medium heat, add diced cooked chicken and sauté for 5-7 minutes until heated through. Season with salt and pepper.
  3. In a large bowl, combine cooked chicken, ricotta cheese, mozzarella cheese, Parmesan, parsley, salt, and pepper. Mix until well combined.
  4. Fill each manicotti shell with the chicken and cheese mixture using a spoon or piping bag.
  5. In a saucepan, melt 4 tablespoons of butter. Add garlic (or garlic powder) and sauté until fragrant. Stir in heavy cream and simmer, whisking in Parmesan until the sauce thickens.
  6. Pour a thin layer of Alfredo sauce into a baking dish. Arrange the filled manicotti shells side by side. Top with remaining sauce.
  7. Cover with foil and bake for 30 minutes. Remove the foil and bake for an additional 10-15 minutes until golden and bubbly.
  8. Let it cool for a few minutes before serving. Garnish with parsley or basil.
