Step-by-Step Instructions
  1. Cook the Pasta: Bring a large pot of salted water to a rolling boil, add rigatoni and cook until al dente, about 10-12 minutes. Reserve ½ cup pasta water before draining.
  2. Prepare the Steak: Season the steak with Cajun seasoning, kosher salt, and black pepper. Pat dry and let it rest for 10 minutes.
  3. Sear the Steak: Heat olive oil and butter in a skillet, sear the steak for 3-4 minutes on each side until golden and medium-rare. Let rest.
  4. Sauté the Garlic: Lower heat and add garlic to the skillet, sauté for about 30 seconds until fragrant.
  5. Create the Sauce: Add beef broth to deglaze, simmer 1 minute, then whisk in heavy cream and let it thicken.
  6. Add Cheeses: Whisk in mozzarella and Parmesan until melted. Use reserved pasta water if sauce is too thick.
  7. Combine Pasta and Sauce: Add drained rigatoni to the skillet, toss gently to coat in sauce.
  8. Finish with Steak and Seasoning: Slice steak thinly, return to skillet, add red pepper flakes, parsley, and lemon juice. Toss to combine.
