Method
 

Step-by-Step Instructions
  1. In a mixing bowl, crack the large eggs and whisk them together with a splash of milk, salt, and pepper until fully combined and smooth. Set aside.
  2. Heat a non-stick skillet over medium heat and add butter, allowing it to melt. Pour the egg mixture into the skillet and scramble for about 3-4 minutes until fluffy.
  3. In another skillet, cook the breakfast sausage links over medium heat for about 6-8 minutes until golden and fully cooked.
  4. Spray your clean skillet with cooking spray and heat it over medium. Lay a tortilla flat on a clean surface.
  5. In the center of each tortilla, spoon a generous amount of scrambled eggs, then place a sausage link on top.
  6. Sprinkle shredded cheddar cheese evenly over the filling in each tortilla.
  7. Fold the sides of the tortilla inwards and roll tightly from the bottom up to encase the filling.
  8. Transfer the roll-ups seam-side down to the heated skillet, cooking for about 2-3 minutes until golden brown and crispy, rotating occasionally.
  9. Remove from skillet, let cool slightly, and serve warm.
