Preparation
- Preheat the oven to 400ºF (204ºC) and roast the garlic wrapped in foil for about 40 minutes.
- Dissolve active dry yeast in warm water and let sit for 10-15 minutes until frothy.
- Combine flour, salt, and rosemary in a bowl. Stir in the yeast mixture and roasted garlic, then add olive oil.
- Cover the dough and let it rise for 8-10 hours until doubled in size.
- Shape the risen dough into a ball and refrigerate overnight or for up to 48 hours.
- Preheat the oven to 450ºF (232ºC) with a Dutch oven inside for about 30 minutes. Bake the dough covered for 30 minutes, then uncover for an additional 15-20 minutes.
- Cool the bread on a wire rack for at least an hour before slicing.
