For the Dough
  • 3 cups All-purpose flour
  • 1.5 teaspoons Active dry yeast
  • 1.75 cups Warm water Not too hot to avoid killing yeast
  • 1.5 teaspoons Salt Coarse sea salt recommended
  • 2 tablespoons Olive oil Optional for richer flavor
For the Flavoring
  • 2 tablespoons Fresh rosemary Chopped
  • 1 head Roasted garlic Mashed for even distribution

Method
 

Preparation
  1. Preheat the oven to 400ºF (204ºC) and roast the garlic wrapped in foil for about 40 minutes.
  2. Dissolve active dry yeast in warm water and let sit for 10-15 minutes until frothy.
  3. Combine flour, salt, and rosemary in a bowl. Stir in the yeast mixture and roasted garlic, then add olive oil.
  4. Cover the dough and let it rise for 8-10 hours until doubled in size.
  5. Shape the risen dough into a ball and refrigerate overnight or for up to 48 hours.
  6. Preheat the oven to 450ºF (232ºC) with a Dutch oven inside for about 30 minutes. Bake the dough covered for 30 minutes, then uncover for an additional 15-20 minutes.
  7. Cool the bread on a wire rack for at least an hour before slicing.
