Method
 

Cooking Instructions
  1. Preheat your oven to 375°F (190°C). Gather all your ingredients and equipment.
  2. In a mixing bowl, combine mozzarella, roasted red peppers, basil, and optional red pepper flakes.
  3. Butterfly each chicken breast, season the inside with salt, black pepper, and Italian seasoning.
  4. Stuff each breast with the filling and secure openings with toothpicks or twine.
  5. Heat olive oil in a skillet over medium-high heat and sear the stuffed chicken for 4-5 minutes on each side.
  6. Transfer chicken to a baking dish, add broth and balsamic vinegar, and bake for 25-30 minutes.
  7. Let the chicken rest for a few minutes after baking, then slice and serve warm.
