- In a small mixing bowl, combine olive oil, balsamic vinegar, dried oregano, dried basil, and a pinch of salt and pepper. Whisk together until well blended and set aside.
- Peel the skin of the cucumber and slice it into bite-sized pieces, placing them in a bowl.
- Quarter cherry tomatoes and add to the bowl with cucumbers. If using, finely chop and add red onion.
- Cut mozzarella into bite-sized pieces and fold into the cucumber and tomato mixture.
