Step-by-Step Instructions for Cucumber Caprese Salad
  1. In a small mixing bowl, combine olive oil, balsamic vinegar, dried oregano, dried basil, and a pinch of salt and pepper. Whisk together until well blended and set aside.
  2. Peel the skin of the cucumber and slice it into bite-sized pieces, placing them in a bowl.
  3. Quarter cherry tomatoes and add to the bowl with cucumbers. If using, finely chop and add red onion.
  4. Cut mozzarella into bite-sized pieces and fold into the cucumber and tomato mixture.
  5. Pour the marinade over the salad mixture and gently toss to coat all ingredients. Let the salad sit for about 10 minutes before serving.
