Step-by-Step Instructions
  1. Chop the boneless skinless chicken breasts into bite-sized pieces. Mince fresh garlic and ginger, then set aside.
  2. In a large pot, heat 2 tablespoons of oil over medium heat. Add the minced garlic and ginger, stirring for about 1 minute until fragrant.
  3. Add the chicken pieces to the pot and cook for approximately 5 minutes until no longer pink.
  4. Pour in 4 cups of chicken broth and a can of coconut milk, stirring to combine. Bring to a gentle simmer over medium heat for about 5 minutes.
  5. Add 1 cup of chopped bell peppers and 1 cup of sliced carrots. Let simmer for another 10 minutes.
  6. Remove from heat and stir in the juice of one lime and 2 tablespoons of soy sauce. Adjust seasoning as needed.
