Prepare Mascarpone Foam
- Soften 1 cup of mascarpone cheese in the microwave for 10-15 seconds. Mix with 1 cup heavy cream, ½ cup whole milk, and 2 tablespoons vanilla syrup. Froth until light and fluffy.
Make Latte Base
- Combine 1 cup whole milk, 2 tablespoons vanilla syrup, 1 tablespoon cocoa powder, and 1 teaspoon rum extract in a saucepan. Heat while whisking until warm and frothy, about 5 minutes.
Brew Coffee
- Prepare 1-2 shots of espresso or ¾ cup brewed coffee in your mug.
Assemble Latte
- Pour the warm chocolate milk mixture over the brewed coffee. Stir gently.
Top and Serve
- Spoon the mascarpone foam over the latte. Dust with cocoa powder and add a lady finger cookie on the side.
