Step-by-Step Instructions
  1. Mix pancake ingredients in a bowl until smooth. Let the batter rest for 5 minutes while preheating the Blackstone griddle over medium heat.
  2. Drizzle oil on the griddle, add sausage, and cook until browned (about 5 minutes). Then add hashbrowns and fry until golden brown (another 5 minutes).
  3. Shift sausage and hashbrowns to the side. Lower heat and pour pancake batter into small rounds. Cook until bubbles appear (about 3-4 minutes), then flip and cook for another 2-3 minutes.
  4. In a separate area, whisk eggs with milk and scramble on low heat until fluffy (about 2-3 minutes). Stir in cheese if desired.
  5. Assemble tacos by layering cooked sausage, hashbrowns, scrambled eggs on a pancake shell. Drizzle with maple syrup and fold.
