Method
 

Step‑by‑Step Instructions
  1. In a mixing bowl, combine warm water, sugar, and instant yeast. Allow to sit for 5 minutes until foamy. Add melted butter, salt, and flour. Stir until shaggy, then knead for 5 minutes.
  2. Place dough in a greased bowl, cover, and let rise for about 1 hour or until doubled in size.
  3. Punch down the dough, divide into 8 pieces, roll each into a 12-inch rope, place a mozzarella stick in the center, fold and seal, then twist into a pretzel shape.
  4. Bring 8 cups of water to a boil, stir in baking soda, and dip each pretzel for 15-20 seconds. Transfer to a parchment-lined baking sheet.
  5. Preheat oven to 425°F. Brush pretzels with egg wash, sprinkle with toppings, and bake for 12-15 minutes until golden brown.
  6. Let cool for a few minutes before serving warm.
