Cooking Steps
- Preheat your oven to 375°F (190°C) and lightly spray a baking dish with nonstick cooking spray.
- Slice the tops off the bell peppers and remove seeds and membranes. Set aside in the baking dish.
- In a skillet, heat olive oil over medium heat, sauté onion and garlic for about 3-4 minutes.
- Add the ground meat to the skillet with the sautéed aromatics, cooking until browned, about 5-7 minutes.
- In a mixing bowl, combine the browned meat with cooked rice, diced tomatoes, and seasonings.
- Stuff each bell pepper with the filling, pressing down slightly to pack it in.
- Cover the baking dish with aluminum foil and bake for 30 minutes.
- Remove foil, add cheese if desired, and bake uncovered for an additional 10 minutes.
- Allow to cool for a few minutes before serving.
