- Preheat your oven to 325°F (160°C) while you prepare the baguette pieces.
- Smash your fresh garlic cloves and finely chop the fresh oregano. Gather your other ingredients.
- In a large pot, heat 2 tablespoons of olive oil over medium heat. Add the smashed garlic and sauté for about 3-4 minutes until soft and fragrant.
- Toss your baguette pieces in a small bowl with a tablespoon of garlic-infused oil. Spread them onto a baking sheet and bake for about 10 minutes, or until golden brown.
- Once the garlic is soft, pour in 6 cups of broth into the pot. Increase the heat and bring to a gentle simmer.
- Add 1-2 teaspoons of salt and the chopped fresh oregano to the pot, stir and simmer for an additional 2-3 minutes.
- Slowly drizzle the beaten eggs into the broth while stirring gently, cooking for an additional 3-5 minutes.
- Remove from heat and stir in the freshly squeezed lime juice. Serve immediately with crispy baguette pieces.
