Ingredients

For the Soup
  • 10 cloves Fresh Garlic Essential for a rich, aromatic flavor; always use fresh bulbs for the best results.
  • 2 tablespoons Olive Oil Helps in cooking the garlic gently so it becomes sweet and tender, avoiding bitterness.
  • 6 cups Vegetable or Chicken Broth Acts as the base for the soup; opt for low-sodium if preferred.
  • 1-2 teaspoons Salt Enhances and balances flavors; taste the broth first before adding more.
  • 2 Eggs Eggs (optional) Adds a creamy richness; slowly drizzle into the simmering soup to form silky strands.
  • 2 tablespoons Fresh Oregano Brings an aromatic touch that elevates the broth; fresh is always better than dried.
  • 2 tablespoons Lime Juice Brightens the soup; add at the end to maintain its fresh zing.
  • 1 baguette Baguette (for serving) Perfect for soaking up the delicious broth; toast in garlic oil for an extra layer of flavor.

Equipment

  • Large Pot
  • Baking sheet
  • Oven

Method

Step-by-Step Instructions
  1. Preheat your oven to 325°F (160°C) while you prepare the baguette pieces.
  2. Smash your fresh garlic cloves and finely chop the fresh oregano. Gather your other ingredients.
  3. In a large pot, heat 2 tablespoons of olive oil over medium heat. Add the smashed garlic and sauté for about 3-4 minutes until soft and fragrant.
  4. Toss your baguette pieces in a small bowl with a tablespoon of garlic-infused oil. Spread them onto a baking sheet and bake for about 10 minutes, or until golden brown.
  5. Once the garlic is soft, pour in 6 cups of broth into the pot. Increase the heat and bring to a gentle simmer.
  6. Add 1-2 teaspoons of salt and the chopped fresh oregano to the pot, stir and simmer for an additional 2-3 minutes.
  7. Slowly drizzle the beaten eggs into the broth while stirring gently, cooking for an additional 3-5 minutes.
  8. Remove from heat and stir in the freshly squeezed lime juice. Serve immediately with crispy baguette pieces.
