Ingredients
  

Filling
  • 1 lb Ground Beef Main protein
  • 1 medium Onion Diced
  • 2 cloves Garlic Minced
  • 1 tsp Cumin Adjust based on spice preference
  • 1 tbsp Chili Powder Increase for more spice
Enchiladas
  • 8 medium Tortillas Lightly fried
  • 2 cups Enchilada Sauce Homemade or store-bought
  • 2 cups Shredded Cheese Use a blend for more flavor

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet, heat oil over medium heat, add ground beef and diced onions; cook for 5-7 minutes until onions are translucent and beef is browned.
  3. Add minced garlic, cumin and chili powder, stir and cook for 1 minute.
  4. Lightly fry tortillas in another skillet for about 10 seconds per side.
  5. Lay a fried tortilla on a plate, spoon beef mixture down the center, roll tight and place seam-side down in greased baking dish.
  6. Pour enchilada sauce over assembled tortillas and sprinkle with shredded cheese.
  7. Bake uncovered for 20-25 minutes until cheese is melted and bubbly.
  8. Remove from oven, let cool for a few minutes, serve hot garnished with cilantro or jalapeños.
