Preparation
- Preheat your oven to 375°F (190°C).
- In a large skillet, heat oil over medium heat, add ground beef and diced onions; cook for 5-7 minutes until onions are translucent and beef is browned.
- Add minced garlic, cumin and chili powder, stir and cook for 1 minute.
- Lightly fry tortillas in another skillet for about 10 seconds per side.
- Lay a fried tortilla on a plate, spoon beef mixture down the center, roll tight and place seam-side down in greased baking dish.
- Pour enchilada sauce over assembled tortillas and sprinkle with shredded cheese.
- Bake uncovered for 20-25 minutes until cheese is melted and bubbly.
- Remove from oven, let cool for a few minutes, serve hot garnished with cilantro or jalapeños.
