  • 1/3 cup Melted Refined Coconut Oil Substitute with melted vegetable oil or vegan butter.
  • 1 cup Plant-Based Milk Any non-dairy milk will suffice.

Step-by-Step Instructions
  1. Preheat your oven to 350ºF (175ºC) and prepare your loaf pan by greasing it and lining with parchment paper.
  2. Sift together the plain flour, pumpkin spice blend, baking powder, baking soda, and pink Himalayan salt in a mixing bowl.
  3. In a large bowl, mash the ripe bananas and mix in the canned pumpkin purée, coconut sugar, melted coconut oil, and plant-based milk until creamy and smooth.
  4. Gently fold the dry mixture into the wet mixture, being careful not to overmix. Optionally add chocolate chips or nuts.
  5. Pour the batter into the prepared loaf pan, smoothing the top with a spatula.
  6. Bake in the preheated oven for about 40-50 minutes. Check for doneness with a toothpick.
  7. Let the loaf cool in the pan for 10-15 minutes before transferring it to a wire rack to cool completely.
