Step-by-Step Instructions
  1. Preheat the oven to 350ºF (175ºC) and prepare an 8x8-inch baking pan with parchment paper or grease it.
  2. In a large bowl, whisk together the eggs, pumpkin puree, maple syrup, coconut sugar, melted coconut oil, and vanilla extract until smooth and creamy.
  3. Gently stir in the oat flour, rolled oats, pumpkin pie spice, and baking soda into the wet mixture until combined.
  4. Fold in the chocolate chips or your choice of nuts or dried fruits.
  5. Pour the batter into the prepared baking pan, spreading it evenly. Optionally, sprinkle additional chocolate chips on top.
  6. Bake for 24-26 minutes until golden. Check for doneness by inserting a toothpick.
  7. Remove from the oven and allow to cool completely in the pan for about 30 minutes before cutting into squares.
