- Preheat the oven to 350ºF (175ºC) and prepare an 8x8-inch baking pan with parchment paper or grease it.
- In a large bowl, whisk together the eggs, pumpkin puree, maple syrup, coconut sugar, melted coconut oil, and vanilla extract until smooth and creamy.
- Gently stir in the oat flour, rolled oats, pumpkin pie spice, and baking soda into the wet mixture until combined.
- Fold in the chocolate chips or your choice of nuts or dried fruits.
- Pour the batter into the prepared baking pan, spreading it evenly. Optionally, sprinkle additional chocolate chips on top.
- Bake for 24-26 minutes until golden. Check for doneness by inserting a toothpick.
- Remove from the oven and allow to cool completely in the pan for about 30 minutes before cutting into squares.
