  • 1/4 tsp Ground Nutmeg
Optional Add-ins
  • 1/2 cup Chopped Nuts
  • 1/2 cup Raisins

Method
 

Preparation Instructions
  1. Preheat your oven to 350°F (175°C) and prepare a 9x5-inch loaf pan.
  2. In a large mixing bowl, beat the eggs and sugar until well combined and slightly pale, about 2-3 minutes.
  3. Add the vegetable oil and vanilla extract to the egg mixture, stirring until smooth.
  4. Fold in the grated carrots, apple, and zucchini.
  5. In a separate bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
  6. Gradually mix the dry ingredients into the wet ingredients until just combined.
  7. If using, fold in the chopped nuts or raisins.
  8. Pour the batter into the prepared loaf pan, filling it about three-quarters full.
  9. Bake for 50-60 minutes or until a toothpick comes out clean.
  10. Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
