- Sear the beef: Heat olive oil in a skillet, season beef cubes, and sear for 2-3 minutes on each side. Remove and let cool.
- Prepare the duxelles: In the same skillet, add olive oil, then mushrooms, shallots, and garlic. Cook until golden. Stir in thyme, season, and cool.
- Roll out the pastry: Roll puff pastry to 1/8 inch thick, cut into 3x3 inch squares, and cover pieces with a towel.
- Assemble the bites: Preheat oven to 400°F, place filling in center of pastry squares, and fold over edges to seal.
- Bake the bites: Brush with beaten egg and bake for 15-20 minutes until golden brown.
- Cool and serve: Let bites cool for a few minutes, then serve warm with optional dips.
