  • 4 pieces tortillas Choose whole wheat or gluten-free.
  • 1 cup cucumber Fresh veggie for crunch.
  • 1 cup cherry tomatoes Halved for ease.
  • 1 cup red onion Thinly sliced.
  • 1/2 cup feta cheese Adds salty creaminess.

Method
 

Preparation Instructions
  1. Whisk together olive oil, lemon juice, minced garlic, dried oregano, salt, and pepper until combined for the marinade.
  2. Place chicken breasts in a resealable bag and pour marinade over. Seal and massage into the meat; refrigerate for 30 minutes to 2 hours.
  3. Preheat grill to medium-high heat. Grill chicken for 6-7 minutes per side until cooked through. Let rest.
  4. Spread hummus on tortillas. Slice rested chicken and layer over hummus.
  5. Add cucumber, cherry tomatoes, red onion, and feta cheese to the wraps.
  6. Roll each tortilla tightly and secure with a toothpick if desired. Cut in half and serve.
