  • 1 whole Lemon thinly sliced

  • 1 cup Cherry Tomatoes
  • 1 medium Bell Pepper sliced
  • 1 medium Zucchini sliced
For the Seasoning
  • 3 cloves Garlic minced
  • 1 teaspoon Dried Oregano
  • 1 teaspoon Paprika regular or smoked
  • to taste Salt
  • to taste Black Pepper
For the Cooking
  • 2 tablespoons Olive Oil or avocado oil
  • 2 tablespoons Fresh Parsley chopped, for garnish

Method
 

Step-by-Step Instructions
  1. Preheat the oven to 400°F (200°C). Gather all ingredients and equipment.
  2. Lightly coat the baking dish with olive oil to prevent sticking.
  3. Arrange cherry tomatoes, bell pepper, and zucchini in an even layer in the baking dish.
  4. Toss the vegetables with minced garlic, oregano, paprika, salt, and pepper.
  5. Place the white fish fillets on top of the seasoned vegetables.
  6. Add thin slices of lemon on top of each fish fillet.
  7. Cover the dish with aluminum foil and bake for 20-25 minutes.
  8. Broil for an additional 5-10 minutes for crispiness.
  9. Garnish with fresh parsley and serve.
