Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C).
  2. Prepare the vegetables: dice the red bell pepper, slice the red onion, mince the garlic, and halve the tomatoes.
  3. In a small bowl, combine oregano, thyme, salt, black pepper, and red pepper flakes.
  4. In an oven-safe baking dish, place the vegetables, crumble feta on top, drizzle with olive oil, and sprinkle the spice blend.
  5. Bake for 25 minutes until vegetables soften and feta is creamy.
  6. Stir in fresh spinach and allow it to wilt.
