Step-by-Step Instructions
  1. Preheat the oven to 325°F (163°C) and line a baking sheet with parchment paper.
  2. In a large microwave-safe bowl, melt coconut oil and maple syrup together in the microwave for 30 to 60 seconds, then stir until smooth.
  3. Add pumpkin puree to the melted mixture and stir until well combined.
  4. Add rolled oats, coconut flakes, chopped pecans, pumpkin seeds, pumpkin pie spice, and salt, then mix thoroughly.
  5. Spread the mixture evenly on the prepared baking sheet, keeping it loose for better clumping.
  6. Bake for 35 to 40 minutes, stirring halfway through, until lightly browned and fragrant.
  7. Allow granola to cool on the baking sheet for at least 15 minutes.
  8. Break into clusters and store in an airtight container at room temperature.
