Preparation Steps
- Prepare the Dough: Follow the instructions for your easy pizza dough and allow it to rise until doubled in size, about 1 hour.
- Cheese Prep: While the dough is resting, slice your fresh mozzarella into ½ inch thick pieces and pat dry if too watery.
- Shape the Dough: Roll or press the dough into a 9x13 inch rectangle on parchment paper and transfer it onto a baking sheet or pizza stone.
- Make the Brine: Mix olive oil, water, parsley, garlic, lemon zest, lemon juice, salt, and pepper in a jar until emulsified.
