For the Brine

  • 1/2 cup Water Standard tap water is perfect.
  • 1/4 cup Fresh Parsley Can substitute with basil or arugula.
  • 2 cloves Garlic (grated) Using fresh garlic will give the best taste.
  • 1 tablespoon Lemon Zest Always choose fresh lemons.
  • 2 tablespoons Lemon Juice Fresh-squeezed is best.
  • 1 teaspoon Fine Salt Table salt is fine here.
  • 1/2 teaspoon Black Pepper Freshly ground is ideal.
For the Toppings
  • 5 oz Fresh Mozzarella Can also use block or shredded mozzarella.
  • to taste Grated Parmesan Cheese Optional for a vegetarian version.
  • to taste Freshly Ground Black Pepper Sprinkle to taste.

Preparation Steps
  1. Prepare the Dough: Follow the instructions for your easy pizza dough and allow it to rise until doubled in size, about 1 hour.
  2. Cheese Prep: While the dough is resting, slice your fresh mozzarella into ½ inch thick pieces and pat dry if too watery.
  3. Shape the Dough: Roll or press the dough into a 9x13 inch rectangle on parchment paper and transfer it onto a baking sheet or pizza stone.
  4. Make the Brine: Mix olive oil, water, parsley, garlic, lemon zest, lemon juice, salt, and pepper in a jar until emulsified.
  5. Assemble Pizza: Make dimples in the dough, pour the brine evenly over it, and arrange mozzarella slices on top.
  6. Bake: Preheat oven to 450°F (230°C) and bake the pizza for about 8-10 minutes until golden and bubbling.
  7. Finish and Serve: Drizzle with lemon juice, top with Parmesan, parsley, and black pepper; slice and serve hot.

Notes
