- In a medium-sized mixing bowl, combine the cottage cheese, fresh blueberries, lemon zest, honey, almond flour, vanilla extract, and a pinch of salt. Gently stir the mixture with a spatula or spoon until just combined, ensuring not to mash the blueberries.
- Using a tablespoon, scoop out approximately 1 tablespoon of the mixture and roll it into a small sphere between your palms. Place the formed protein bites onto a parchment-lined baking sheet, leaving space between each.
- Preheat your oven to 350°F (175°C). Once heated, place the baking sheet in the oven and allow the protein bites to bake for about 10-12 minutes until they turn a light golden color and are firm.
- Remove the Lemon Blueberry Cottage Cheese Protein Bites from the oven and let them cool on the baking sheet for about 5 minutes. Optionally drizzle with honey and garnish before serving.
