- Combine 2 cups of milk and 2 cups of granulated sugar in a heavy-bottomed saucepan. Stir over medium heat until sugar dissolves, about 5 minutes.
- Continue cooking the mixture, stirring occasionally, until it reaches the soft ball stage (234°F to 240°F) on a candy thermometer, about 20–25 minutes.
- Remove saucepan from heat and let it cool for about 10 minutes.
- Add 1 teaspoon of vanilla extract. If using, fold in 1 cup of chopped nuts.
- Spread butter on hands, then pull the candy mixture until smooth and pliable, shaping into pieces on a parchment-lined tray.
