Steps
- Slice each date open along one side, remove the pit, and set aside.
- Combine coconut butter and shredded coconut in a small bowl until smooth.
- Stuff each date with about a half tablespoon of the coconut filling and press an almond into the center.
- Melt the dark chocolate chips and coconut oil in a saucepan over low heat.
- Dip each stuffed date into the melted chocolate and place on a lined baking sheet.
- Freeze the coated dates for about 10 minutes to let the chocolate set.
