Coconut Filling
  • 1 cup Unsweetened Shredded Coconut Adds natural sweetness and delightful texture
  • 1/2 cup Coconut Butter Soften if too solid
Coating
  • 1 cup Dark Chocolate Chips Opt for dairy-free for a vegan twist

Method
 

Steps
  1. Slice each date open along one side, remove the pit, and set aside.
  2. Combine coconut butter and shredded coconut in a small bowl until smooth.
  3. Stuff each date with about a half tablespoon of the coconut filling and press an almond into the center.
  4. Melt the dark chocolate chips and coconut oil in a saucepan over low heat.
  5. Dip each stuffed date into the melted chocolate and place on a lined baking sheet.
  6. Freeze the coated dates for about 10 minutes to let the chocolate set.
