For the Meats
  • 6 oz Hard Salami Pre-sliced or chopped from a log.
  • 6 oz Pepperoni Pre-sliced or chopped for heartiness.
For the Vegetables
  • 1 can Canned Artichoke Hearts Quartered in brine.
  • 1 pint Cherry Tomatoes Halved for easy eating.
  • 1 cup Olives Mix of Kalamata and green olives.
  • 1/2 cup Pepperoncini Pre-sliced.
  • 1/2 medium Red Onion Thinly sliced.
  • 1/2 cup Fresh Basil Use to taste.
For the Cheese
  • 8 oz Fresh Mozzarella Pearls No need for additional prep.
For the Vinaigrette
  • 1/2 cup Olive Oil Light-tasting is preferred.
  • 3 tbsp Red Wine Vinegar Essential for zing.
  • 1 clove Garlic Minced.
  • 1 tsp Italian Seasoning Blend of herbs.
  • 1/4 tsp Red Pepper Flakes Adjust to spice preference.

Method
 

Step-by-Step Instructions
  1. Cook the Pasta: Boil salted water, add rotini pasta, and cook for 8–10 minutes until al dente. Drain and rinse under cold water.
  2. Make the Vinaigrette: Whisk together olive oil, red wine vinegar, garlic, Italian seasoning, red pepper flakes, salt, and black pepper.
  3. Prepare Salad Ingredients: Chop salami and pepperoni, halve cherry tomatoes, slice olives and red onion, and chop basil.
  4. Combine and Chill: Add cooled pasta to prepared ingredients, drizzle with vinaigrette, and toss to coat. Chill for at least 30 minutes.
  5. Serve: Garnish with additional basil and parmesan if desired. Enjoy!
