  • 2 heads Garlic roasted until soft and caramelized
  • 2 tablespoons Olive Oil for roasting
  • 8 ounces Cream Cheese softened
  • 1 cup Sour Cream or Greek yogurt
  • 1 cup Shredded Mozzarella Cheese or fontina
  • 1/2 cup Grated Parmesan Cheese or Pecorino Romano
  • 1 teaspoon Salt adjust to taste
  • 1/2 teaspoon Pepper optional
  • 2 tablespoons Fresh Chopped Parsley for garnish

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C). Slice off ¼ inch from the tops of the garlic heads, drizzle with olive oil, and wrap in foil. Roast for 40-50 minutes until soft and caramelized.
  2. Once roasted garlic has cooled, squeeze the cloves into a mixing bowl and mash into a smooth paste.
  3. Add softened cream cheese and sour cream to the mashed garlic and mix until smooth. Fold in mozzarella and half of the parmesan, along with salt and pepper.
  4. Transfer the mixture to a greased baking dish, top with remaining parmesan, and bake at 350°F (175°C) for 25-28 minutes until bubbly and golden.
  5. Let cool for about 5 minutes and garnish with parsley. Serve warm with crostini, crackers, or vegetable sticks.
