- Preheat your oven to 400°F (200°C). Slice off ¼ inch from the tops of the garlic heads, drizzle with olive oil, and wrap in foil. Roast for 40-50 minutes until soft and caramelized.
- Once roasted garlic has cooled, squeeze the cloves into a mixing bowl and mash into a smooth paste.
- Add softened cream cheese and sour cream to the mashed garlic and mix until smooth. Fold in mozzarella and half of the parmesan, along with salt and pepper.
- Transfer the mixture to a greased baking dish, top with remaining parmesan, and bake at 350°F (175°C) for 25-28 minutes until bubbly and golden.
- Let cool for about 5 minutes and garnish with parsley. Serve warm with crostini, crackers, or vegetable sticks.
