  • 1 cup Mozzarella Cheese any mild cheese works well
  • 1/2 cup Parmesan Cheese nutritional yeast can substitute
  • 1 cup Frozen Chopped Spinach thawed and well-drained
  • 1 teaspoon Kosher Salt adjust to taste

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and grease the muffin pan.
  2. Melt butter in a small pan, sauté onion for 4 mins, then add garlic for 1 min.
  3. In a bowl, whisk eggs, then mix in ricotta, mozzarella, and parmesan until creamy.
  4. Fold in thawed spinach and cooled onion-garlic mixture with salt.
  5. Fill greased muffin cups with the mixture, leaving a little space.
  6. Bake for 20 to 25 minutes until golden brown and centers are set.
  7. Cool for 5 minutes, then run a knife around edges and transfer to a plate.
