  • 1 cup Frozen Peas and Carrots or fresh
  • 2 tbsp Tomato Paste or ketchup
  • 1 cup Beef Broth or vegetable broth for vegetarian
  • 1 tbsp Worcestershire Sauce ensure gluten-free if needed
For the Topping
  • 3 large Potatoes or cauliflower for low-carb
  • 1/4 cup Milk or plant-based alternative
  • 2 tbsp Butter or vegan alternative
  • 1 cup Shredded Cheddar Cheese optional
  • 1 tbsp Fresh Parsley, Chopped for garnish

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C). Gather your muffin tin and necessary equipment.
  2. Peel and chop the potatoes, then boil them in salted water for 10–12 minutes until tender. Drain and mash with milk, butter, salt, and pepper.
  3. In a skillet, cook ground beef for 5–7 minutes until browned. Drain excess fat.
  4. Sauté chopped onions and minced garlic with the cooked meat for about 3 minutes. Add peas and carrots, tomato paste, broth, and Worcestershire sauce. Simmer for 3–5 minutes.
  5. Grease muffin tin. Fill each cup with meat mixture, about two-thirds full.
  6. Spread mashed potatoes evenly on top of meat mixture.
  7. If using cheese, sprinkle it on top of the mashed potatoes.
  8. Bake for 10–15 minutes until tops are golden brown. Broil for an additional 2–3 minutes for extra crispiness if desired.
  9. Remove from oven, let cool slightly, garnish with parsley, and serve warm.
