- In a large mixing bowl, combine mascarpone cheese, coconut cream, sugar, and vanilla extract. Beat with a hand mixer on medium speed for 2-3 minutes until smooth and creamy.
- Quickly dip each ladyfinger into the coffee mixture, ensuring they are coated but not overly soggy. Place them on a plate.
- In a serving dish, arrange a layer of soaked ladyfingers, followed by a layer of mascarpone filling. Repeat layers until all ingredients are used.
