- Preheat the oven to 375°F (190°C) and spray a muffin tin with non-stick cooking spray.
- Roll out the thawed puff pastry on a floured surface and cut into 2-inch squares. Place in muffin cups.
- Slice the brie cheese into 12 equal pieces and place one slice on each puff pastry square.
- Spoon 1 tablespoon of peach preserves over each brie slice.
- Bake in the preheated oven for 11 minutes until the pastry is golden brown and the brie is bubbly.
- Let cool for a few minutes before serving warm on a platter.
